【食譜】夏日料理 酥脆爽口的越南春捲 中英文食譜分享

酥脆爽口的越南春捲最適合夏天了! 雖然備料較細碎,不過是一道不容易失敗的料理,廚房新手一定要勇敢嘗試,而且保證大小朋友都愛吃。如果能找到越南口味的魚露沾醬來搭配就更道地了!附上中英文對照食譜,不妨一起來試試看吧~

這道料理由J掌廚,大廚風範就是廚房有什麼料就變什麼樣,所以成品也是非正宗越南口味,但吃貨本人一律給100分~

以下為中英文版食譜,請視語言能力各取所需

步驟1:準備材料

材料:

200克絞肉(豬雞皆可,剛好家裡只剩雞胸所以就用了)
紅蘿蔔一條 切細丁
香菇5朵 切細丁
米粉5克
紅蔥1/3顆 切細丁
紅辣椒(不嗜辣者可略)

步驟2:準備醃料

蠔油 1匙
魚露 1匙
玉米粉 1匙
白胡椒 1/2匙
醬油 1茶匙
麻油 1茶匙

步驟3:將所有材料放入醃料中醃30分鐘左右之後入鍋翻炒再撈起

步驟4:包春捲皮

準備約15張春捲包,把翻炒過的餡料包進去
料要盡量包得緊實
可視個人偏好加香菜或歐芹進去

步驟5:下鍋用中火油炸至黃褐色

步驟6:準備沾醬

魚露 2匙
糖 1匙
檸檬汁 1/2顆 
蒜頭 3瓣 切碎
紅辣椒 2小條 切碎

完成囉!

English Recipe

2 tsp fish sauce
1 tsp sugar or honey
1 lime
3 cloves garlic- chopped
2 red hot chili – chopped
Ginger flower -I personally like it a lot ( optional)

Ingredients:

200g Chicken breast meat- small dice
1 medium sized carrot- shredded
5pc mushrooms- small dice
5g glass noodles
1/3 big red onion- small dice
3 red hot chili ( optinal)

Put all the above ingredients into a bowl and start marinate with the following:
1 tbsp oyster sauce
1 tbsp fish sauce
1 tbsp corn starch
1/2 tsp white pepper powder
1 tsp soya sauce
1 tsp sesame oil

Mix all together with the above ingredients, marinate for at least 30 mins.

Wrap method:
prepare 15 pcs of Poh Piah skin
Glue – 1/2 tsp corn starch add 2 tsp water
2 stokke corriander – cut into 3’inc long to wrap it together with ingredients for a tangy flavor.
Ensure to wrap it firm to have solid mouthful bite.

Fry with medium heat
Sufficient veg oil- At least cover half of the spring rolls.
Fry the spring rolls to golden brown color.
Dry out the excessive oil with kitchen towel

Sauce Ingredients:


2 tsp fish sauce
1 tsp sugar or honey
1 lime
3 cloves garlic- chopped
2 red hot chili – chopped
Ginger flower -I personally like it a lot ( optional)

For more refreshing way eating, Lettuce, salad leaves or pickle are the best combination.
